Lemony Love




It's amazing how well this plain looking cake was wiped out in less than 30 mins. I was looking for some inspiration to make my weekly cake. And chocolate is starting to get a little expensive to eat it almost everyday. So our 3 little lemons from the market last saturday came into good use. I saved a tiny piece for my breakfast the next morning and this cake was still nice and moist! Give it a try. The glaze on top actually gives it extra lemony taste and moistness!

Lemon Pound Cake with Lemon Glaze
Ingredients
6 tbsp Butter
2/3 cups Sugar
4 Egg Yolks
1/3 cup Milk
1tsp Lemon Juice
Zest of 1/2 Lemon
1 1/4 cups Flour
1tsp Baking Powder

Lemon Glaze:
1/4 cup Sugar
1/4 Water
Juice of 1 Lemon

Method:
1. Cream Butter and Sugar till light and fluffy.
2. Beat Yolks slightly. Stream into Butter mixture slowly.
3. Mix in Milk slowly.
4. Add Lemon Juice.
5. Fold in Baking Powder and Flour all at once.
6. Bake at 180 degrees C for 25 minutes or till golden brown and cooked.
7. For Glaze: Boil Sugar, Water and Lemon Juice till Sugar dissolved.
8. Upon exit, brush the top of the cake with Lemon Glaze.
9. Serve warm or day after with fresh cream.
