Recipe time! Chocolate mountain is back!

I've removed this recipe months ago when something happened to the html of my blog. Finally I can repost this for those who love their chocolatey muffins. This is not one of the good muffin recipes that I've came across but it's pretty straightforward and ingredients are not hard to obtain. Here we go:


Makes 10
50g Dark Chocolate
85g Butter
1 tbsp Milk/Water/Coffee (according to your choice)
190g Flour
1 tsp Baking Powder
1/2 tsp Bicarbonate of Soda (I did not add this!)
85g Brown Sugar (Muscovado/Demerara if you are posh)
50g Castor Sugar
1 Egg
142ml Sour Cream (Double cream to increase richness!)

(1) Combine Flour, Baking Powder, Bicarbonate of Soda, Brown Sugar, Castor Sugar together in a mixing bowl.
(2) Melt Butter together with Dark Chocolate over Bain-Marie.
(3) Mix Milk/Water, Egg and Sour Cream in another bowl.
(4) Mix Chocolate mixture into above till thoroughly combined.
(5) Pour wet mixture onto dry ingredients. Beat well but do not overmix.
(6) Bake at 190 Degrees C for 20 minutes or till baked.
(7) Serve warm with chocolate sauce or dollop of whipped cream.
