Alkalised Cocoa

Do you know what is alkalised cocoa? Also known as Dutch-processed cocoa powder. It is cocoa powder that is treated with alkali during the manufacturing process so that it is easier to mix and digest.

You will see that certain chocolate recipes call for such cocoa powder. Personally I do not find any big difference between the alkalised and the non-alkalised versions in terms of taste.

However, researchers have found that this process known as alkalisation decreases the Flavanol content of cocoa which means a reduction in the antioxidant properties.

Research has also shown that a high cocoa content does not mean that the flavanol content is high.
